eating wisely recipes
1 large globe eggplant Salt and pepper Olive oil
Balsamic or red wine vinegar 1 clove garlic V* cup chopped parsley orcilantro
1 Preheat the oven to 375°.
2 Peel eggplant and cut into i-inch cubes. Place in a baking dish, season with salt and pepper, and toss with olive oil. Sprinkle with a few tablespoons water, cover, and bake for 30 to 40 minutes, or until the eggplant is very soft.
2 Meanwhile, peel and dice the shallots finely and macerate for 10 minutes in about 2 tablespoons of vinegar. Peel and mash the garlic and add to the shallots.
3 Add the eggplant to the shallot mixture, mash well with a fork, and let cool to room temperature. Stir in the parsley and add olive oil and vinegar to taste.
