B.K.S. Iyengar, Light on Pranayama: The Yogic Art of Breathing (Crossroad, 1997). This book presents a thorough overview of beginning to advanced pranayama techniques, complete with a detailed description of the mechanism of breathing and extremely precise photographs of the author demonstrating each practice.

Richard Rosen, The Yoga of Breath: A Step-by-Step Guide to Pranayama (Shambhala, 2002). In case you find Iyengar's book too complex, you might want to try this book by a student of Iyengar Yoga, which presents a comprehensive step-by-step program for developing a steady pranayama practice, which is designed to be followed over an extended period of time.

Swami Rama, et al., Science of Breath: A Practical Guide (Himalayan Institute Press, 1979). This is an eminently accessible introduction to pranayama, with a discussion of the importance of breath, the mechanism of breathing, and easy-to-follow instructions on the principal yogic breathing techniques illustrated with line drawings.
