You can make oat flour at home by simply processing rolled oats in a blender or food processor until powdery.
Butter tor greasing ramekins 2 pounds ripe organic apricots, pitted 3/« cup organic cane or maple sugar
1 tablespoon plus 1 teaspoon arrowroot or cornstarch
2 tablespoons dried organic lavender flowers
1 'A cups organic oat flour Pinch of salt '/a cup organic unsalted butter, melted 'A cup organic plain yogurt
1 Place a rack in the center of the oven; preheat to 400". Butter 8 4-inch ramekins and set aside. Cut apricots into i-inch pieces and put in a medium bowl.
2 In a small bowl, whisk together Va cup sugar and the arrowroot or cornstarch. Sprinkle mixture over the fruit, add the lavender (reserving V2 tablespoon of lavender to sprinkle over the tops after baking), and toss to combine.
3 Spoon the fruit mixture into the prepared ramekins, leaving Va inch of space for the topping.
4 Combine the oat flour, remaining V2 cup sugar, and salt in a medium bowl. Stir in the melted butter. Add the yogurt and mix until everything comes together into a dough.
5 Using the back of a spoon, spread the topping evenly, about Va inch thick, over the apricot mixture. Place the ramekins on a baking sheet and bake for 20 to
25 minutes, or until topping is slightly golden brown. Sprinkle the tops with a little additional sugar and the reserved lavender flowers before serving.
